About Penzeys Korintje Cinnamon
Sweet and mellow, Korintje cinnamon is the type of cinnamon we all remember from our childhood. Fragrant Korintje cinnamon is as strong as China cinnamon, but smoother. We love Korintje cinnamon for sprinkling--on hot cereal, oatmeal and cream of wheat, French toast, pancakes and waffles, sugar cookies and pie crusts. Perfect for cinnamon breads, quick, yeast, or toasted with raisins.
Korintje Cinnamon

Serves 2 Prep 15 min.

Ingredients
1 cup old-fashioned certified gluten free oats
2 tbsp brown sugar
1 tsp Penzeys Korintje Cinnamon
1 tsp chia seeds
1 tbsp ground flaxseed
pinch salt
1 tsp vanilla extract
2 tbsp coconut yogurt or another plant-based yogurt
1 cup non-dairy milk of choice
Icing
1 tbsp coconut yogurt or another plant-based yogurt
1/2 tsp maple syrup
1/2 tsp lemon juice
1 tsp oat milk or another plant-based milk such as soy or almond
Directions
In a medium size bowl mix together all the dry ingredients: oats, brown sugar, chia seed, flaxseed, cinnamon, and a pinch of salt.
Add in plant milk, yogurt, and vanilla extract. Mix with a spoon until combined.
Pour into two small mason jars. Cover and let it set overnight or at least 4 hours in the fridge.
Once oats are set, give it a good stir and add more milk to adjust the thickness to your liking.
Make your icing. In a small bowl mix together yogurt, lemon juice, maple syrup, and plant milk. Drizzle this over your final cinnamon roll overnight oats.
