These delicious, easy to make, light + fluffy buckwheat pancakes are also naturally gluten free.
ngredients:
1 cup buckwheat flour
2 tablespoons sugar (optional)
1 teaspoon baking powder
½ teaspoon salt
1 cup non-dairy milk
1/4 unsweetened applesauce
2 tablespoons melted vegan butter
Instructions:
In a large bowl, mix the dry ingredients.
In another bowl, whisk the wet ingredients together.
Combine the wet ingredients with the dry ingredients and stir until just combined.
Heat a griddle or non-stick pan over medium heat. Pour batter onto the griddle and cook until bubbles form, then flip and cook until golden brown.
