Buckwheat Pancakes

These delicious, easy to make, light + fluffy buckwheat pancakes are also naturally gluten free.




ngredients:

  • 1 cup buckwheat flour

  • 2 tablespoons sugar (optional)

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • 1 cup non-dairy milk

  • 1/4 unsweetened applesauce

  • 2 tablespoons melted vegan butter


Instructions:

  1. In a large bowl, mix the dry ingredients.

  2. In another bowl, whisk the wet ingredients together.

  3. Combine the wet ingredients with the dry ingredients and stir until just combined.

  4. Heat a griddle or non-stick pan over medium heat. Pour batter onto the griddle and cook until bubbles form, then flip and cook until golden brown.
