Buckwheat Banana Muffins

Ingredients:
1 ½ cups buckwheat flour
½ cup sugar
2 ripe bananas, mashed
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon vanilla extract
1/2 cup unsweetened applesauce
⅓ cup coconut oil
Instructions:
Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a bowl, mix the buckwheat flour, baking soda, and baking powder.
In another bowl, combine the mashed bananas, sugar, eggs, oil, and vanilla.
Mix the wet and dry ingredients until just combined.
Pour batter into muffin tins and bake for 20-25 minutes or until a toothpick comes out clean.
