Ingredients:
3 medium overripe bananas, mashed (about 1 1/3 cup mashed banana)
1/4 cup pure maple syrup
1/2 cup unsweetened apple sauce
1/3 cup olive oil
2 teaspoons vanilla extract
1 teaspoon apple cider vinegar
1 1/2 cups chickpea flour (garbanzo bean flour)
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
Optional add ins:
1/2 cup chocolate chips
1/2 cup chopped walnuts or pecans
1 cup blueberries
1 cup shredded coconut
Instructions:
1. Whisk together chickpea flour, water, olive oil, and salt in a bowl.
2. Let it sit for at least 30 minutes.
3. Preheat your oven to 450°F (232°C), placing a cast-iron skillet inside.
4. Once preheated, add a drop of oil to the skillet and carefully pour in the batter.
5. Bake for 15 to 20 minutes until golden and crispy.
